Pumpkin Chocolate Chip Cookies

Fall has officially hit and so have all my pumpkin recipes & scented candles! Lol. These pumpkin cookies are probably some of my favorite. Light, fluffy, and moist! My husband actually said these were the best cookies I’ve ever made 😉

Ingredients

  • 2 c all purpose flour
  • 1 ½ sticks of butter – room temp. If salted then omit the ½ tsp salt
  • 1/3 c pumpkin puree
  • 1 ½ tsp vanilla
  • 1 c brown sugar
  • ½ c white sugar
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1/8 tsp cloves
  • 1/8 tsp nutmeg
  • 1 c chocolate or white chocolate chips

Directions

  1. Preheat oven to 350F
  2. Beat together butter, sugars, and vanilla until smooth
  3. Mix in pumpkin puree until combined
  4. Add dry ingredients and mix well
  5. Stir in chocolate or white chocolate chips
  6. Place a spoonful onto nonstick pan or parchment paper
  7. Bake for 8 to 12 minutes, depending on cookie size
