
Fall has officially hit and so have all my pumpkin recipes & scented candles! Lol. These pumpkin cookies are probably some of my favorite. Light, fluffy, and moist! My husband actually said these were the best cookies I’ve ever made 😉
Ingredients
- 2 c all purpose flour
- 1 ½ sticks of butter – room temp. If salted then omit the ½ tsp salt
- 1/3 c pumpkin puree
- 1 ½ tsp vanilla
- 1 c brown sugar
- ½ c white sugar
- 1 tsp baking soda
- ½ tsp cinnamon
- ½ tsp salt
- 1/8 tsp cloves
- 1/8 tsp nutmeg
- 1 c chocolate or white chocolate chips


Directions
- Preheat oven to 350F
- Beat together butter, sugars, and vanilla until smooth
- Mix in pumpkin puree until combined
- Add dry ingredients and mix well
- Stir in chocolate or white chocolate chips
- Place a spoonful onto nonstick pan or parchment paper
- Bake for 8 to 12 minutes, depending on cookie size
