Girl’s Night
I went to visit my girlfriends in Jacksonville Friday morning after my Pilates class. We had a ton of fun! Last time I was there I got my first tattoo… This visit I added two more! Lol. We first went to Lola’s, a Mexican restaurant, which I highly recommend if you’re visiting anytime soon. Their food was wonderful and gave you plenty of it. Plus, the margaritas are always half off. Uh hello!! That is what I’m talking about hahah. Anyways, once we had a few of those in our system we walked across the street to the tattoo parlor. I got two small initials on each of my ankles! We finished our girl’s night out dancing and singing downtown, as always.
Moral of the story ladies, make sure you have plenty of girl time! It is good for our souls!!
Saturday Date Night
Once I was home from Jacksonville I unpacked my bags and started to get ready for date night. Anyone else unpack immediately or I am crazy??! Lol. We decided to go to Outback since we hadn’t been in a while, which also meant I could dress more casual. My casual, of course, but not many others! We had some margaritas and a new shrimp appetizer dip that I hope stays on the menu because its officially our favorite. Date night ended in our pajamas watching horror movies, our go to. Do you like horror, comedy, or romance??
Sunday recovery
Sundays are usually my self-care day that involve face mask while catching up on my TV shows, baking dessert, and preparing myself for a long work week! What shows are you currently watching? My current favorites are Katy Keene and The Bold Type. They are so good! I usually will watch two or three episodes and then start baking. Today I baked cookies, more on the fattening side, and then prepped dinner for tonight. Double Chicken Enchiladas! Ozie helped with this one. I will post the recipe this week. Be on the lookout!

Chocolate Chip Cookies
- 2 c almond flour
- 1/3 c granulated sugar
- ½ tsp baking soda
- pinch of salt
- ½ c softened butter
- 1 Tbsp cream cheese – optional
- 1 egg
- 1 Tbsp vanilla
- 1 c chocolate chips
- Preheat oven to 350 degrees F
- Mix all dry ingredients except chocolate chips!
- Then add butter, vanilla, egg and cream cheese. Mix well.
- Add chocolate chips and let sit in fridge for 10ish minutes.
- Roll up firmly about an inch and a half size ball (should make about 20) and place on a non stick pan. Bake for 12 to 15 minutes. Enjoy!!
